1 medium Onion, chopped
2 cloves garlic, minced
1 tblsp. Chili powder
? tsp. cumin
salt& pepper
1 chopped green pepper, optional
6 to 8 corn tortillas
2 tblsp. Oil
1 can enchilada sauce
? cup sour cream
? cup salsa
? cup water
? lb. shredded cheese
Brown ground beef with onion and garlic.
Add seasonings.
Quickly fry tortillas in a bit of oil for about 10 seconds per side. Drain on paper towel.
Take the cooled tortillas and place several tablespoons of the meat filling on the center. Rool up and put into a casserole dish.
When all tortillas and meat are used up, pour the can of enchilada sauce over them.
Mix remaining ingredients together( except the cheese) and pour over the enchiladas.
Sprinkle with the cheese.
Bake in a 375 F. oven for about 30 minutes or until it is bubbly!
