2 cups finely chopped peeled potatoes
2 tablespoons butter
1/2 cup chopped onion
1 garlic clove, minced
2 cups finely chopped cooked corned beef
2 tablespoons canola oil
1/4 teaspoon onion powder
1/4 teaspoon coarsely ground pepper
Minced fresh parsley, optional
1Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 8 to 10 minutes or until just tender. Drain and set aside.
2In a large skillet, heat butter over medium heat. Add potatoes; cook and stir until edges begin to brown. Add onions; cook and stir until tender, 3 to 4 minutes. Add garlic; cook 1 minute longer.
3Stir in corned beef, oil, onion powder and pepper. Reduce heat; cook and stir until heated through, 8 to 10 minutes. If desired, garnish with parsley.
