1 to 1 ½ lbs. salmon filet
kosher salt& ground pepper to taste
½ cup honey
¼ cup fresh basil
Mixed salad greens
Strawberries hulled and sliced
Balsamic vinegarette
Oven 450f
Rinse and pat dry the salmon, set the filet skin side down in a baking dish.
Lightly score salmon in a diamond pattern. Season with salt and pepper.
Cover liberally with honey.
Arrange whole basil leaves on the fish. Bake until done, about 15 minutes.
In the last 5 minutes spoon honey in pan over the filet.
Serve fish on mixed greens. Garnish with strawberries. Drizzle with balsamic vinegarette.
Cooks note: Buy the vinegarrette already mixed or mix ¼ cups balsamic vinegar with ½ cups honey.
