1/2 (14.1-ounce, 2-count) box rolled pie crusts, remaining pie crust reserve for another use
1/2 cup cranberry sauce, store-bought or homemade
3 ounces brie cheese, cut into 24 pieces
1 tablespoon fresh chives, optional, chopped, for garnish
Step 1 - Preheat the oven to 450 degrees F.
Step 2 - Lightly coat a 24-cup mini muffin tin with cooking spray.
Step 3 - Unroll the pie crust dough onto a cutting board or a clean work surface.
Step 4 - Roll out the pie dough until it is about 12 inches in diameter.
Step 5 - Cut 24 (2-inch) circles out of the dough with a biscuit cutter. Reroll the scraps as needed to ensure you get 24 circles.
Step 6 - Place the dough circles in the prepared muffin cups, gently pressing the dough circles into the bottoms and very slightly up the sides of each cup.
Step 7 - Pierce each of the dough circles with a fork.
Step 8 - Bake the dough circles until they are lightly browned, about 5 to 7 minutes.
Step 9 - Add 1 teaspoon of the cranberry sauce to each muffin cup, spreading it evenly onto the dough circles.
Step 10 - Top each of the cranberry layers with 1 piece of the brie cheese.
Step 11 - Bake until the cranberry sauce is hot and the cheese has slightly melted, about 5 minutes.
Step 12 - Allow the brie bites to cool for 5 to 10 minutes.
Step 13 - Evenly sprinkle the brie bites with the chives and serve warm.
