1 large onion, chopped
2 tblsp. Olive oil
2 garlic cloves, minced
1 tblsp.. mint
4 cups spinach
4 cups cooked rice
3 tblsp. Lemon juice
1 tsp. lemon zest
1 cup green peas
2 tblsp. Fresh dill
½ cups calamada olives
½ cup feta, crumbled
Saute oil, garlic, onion, mint and pepper. Add remaining ingredients except for feta. Heat thoroughly. Serve topped with feta.
