1 can 15 ounce pinto beans, rinsed and drained or use cooked pinto beans
2 Tbsp. wheat germ or ground flax seed meal
1 cup barbecue sauce
1/4 cup onion, chopped (optional)
1 clove garlic, minced (optional)
4 slices bread, toasted
4 slices American cheese.
Saute onion and garlic if using, in a little olive oil until tender.
I have made this dish without sautéing the vegetables, however, and I liked
the result.
Add pinto beans and mix well.
Add barbecue sauce and wheat germ, mix well, and cook until heated through.
Place hot bean mixture on top of each slice of toast and then top with
sliced cheese.
Because the beans are hot, the cheese will begin to melt.
Serves 4.
