3 large eggs, room temperature
3/4 cup granulated sugar
1 teaspoon vanilla extract, optional
1 1/3 cups all-purpose flour, sifted
1 pound fresh strawberries, hulled, halved or quartered, divided
whipped cream, optional, to taste, for serving
Step 1 - Preheat the oven to 400 degrees F.
Step 2 - Grease a 9-inch round cake pan or pie plate.
Step 3 - In a bowl, add the eggs, the sugar, and the vanilla and using an electric hand-mixer on medium speed, beat until pale in color, about 3 minutes.
Step 4 - Add the flour to the egg mixture and using a rubber spatula, gently fold until just combined and a smooth batter forms.
Step 5 - Add almost all of the strawberries to the batter, reserving a few for topping, and fold to combine.
Step 6 - Spoon the batter into the prepared baking pan.
Step 7 - Top the batter with the reserved strawberries.
Step 8 - Bake the cake for 5 minutes.
Step 9 - Reduce the oven temperature to 350 degrees F.
Step 10 - Continue to bake the cake until golden on top and a toothpick inserted into the center comes out clean, about 30 to 35 minutes.
Step 11 - Allow the cake to cool until it is just warm.
Step 12 - Serve with the whipped cream.
