3 cups heavy cream
1 (2 inch) piece vanilla bean (split lengthwise) or 2 teaspoons vanilla extract
2 teaspoons corn starch
6 egg yolks
1 cup Coco Casa Pina Colada Mix
2 tablespoons cognac or brandy
2 tablespoons dark brown sugar
In a saucepan, combine heavy cream and vanilla; heat until scalded. In a bowl, beat egg yolks and corn starch until smooth. Slowly stir in scalded cream, Pina Colada mix and liquor. Strain mixture into a baking dish. Place dish in a pan containing 1 inch hot water. Bake at 325 degrees for 35 to 40 minutes, or until set. Chill several hours or overnight. Before serving, sprinkle surface with brown sugar. Place dish over ice in a baking pan, Place under a preheated broiler until sugar is melted, about 5 minutes. Serve immediately.
Makes 6 to 8 servings.
