Refer to Method section.
Soak cut up chicken  pieces in cold water for 		Few minutes. DO NOT DRY. 		Place damp chicken on wax paper and season
		With salt and pepper on both sides.  Coat each 	Piece with flour, well coated. 		 		In a large frying pan, melt  olid Crisco shortening. 		Black iron skillet is best but not necessary. Grease 		Should  be at least 1-2 inches deep. Test grease  		For hotness by dropping small amount of water
		In it. If it pops, it is ready!!!
		Brown one side of chicken, no lid. Turn each piece 		Over, reduce flame, cover with lid. Cook about 
		15 or 20 minutes with cover. Remove cover and
		finish cooking until chicken is crispy. May have to
		turn one or two times more, but no more lid!!
		You can test for doneness by inserting a toothpick.
		If it goes in easy, chicken is done.
