Coffee Cake
 2 c. all purpose flour
 2 1/2 tsp. baking powder
 1 Tbsp. pumpkin pie spice
 3/4 c. brown sugar, packed
 1/4 c. butter, softened
 1 c. pumpkin puree
 1/2 c. milk
 1 large egg
Streusel Topping
 3/4 c. brown sugar, packed
 1/2 c. all purpose flour
 4 Tbsp. butter, softened
 1/2 tsp. pumpkin pie spice
1.  Preheat oven to 350°.
2.  In a medium bowl, combine flour, baking powder, and pumpkin pie spice. Set aside.
3.  In a separate mixing bowl, cream butter and brown sugar.
4.  Mix in pumpkin puree, milk, and egg.
5.  Add dry ingredients and mix just until blended.
6.  Spoon batter into a greased 8x8 inch baking pan.
7.  Prepare streusel by mixing ingredients together with a fork or pastry blender until they resemble coarse crumbs.
8.  Sprinkle streusel topping evenly over batter
9.  Bake at 350° for 50 to 60 minutes, until top is golden brown and toothpick inserted in center comes out clean.
