Colorful Sauerkraut Salad (Diabetic)

Ingredients:

1 can (29 ounce) sauerkraut, drained
3 stalks celery, sliced
1 medium onion, diced
1/2 bell pepper, diced (choice of color)
1/2 cup diced pimiento
1/3 cup vegetable oil
1/4 cup white vinegar
3/4 cup Equal? Spoonful*
Salt and pepper to taste

Method:

1. Combine vegetables in a large bowl. Whisk together oil, vinegar and
Equal? in a small bowl. Toss vegetables and dressing to combine. Season with salt and pepper to taste.
2. Refrigerate, covered, several hours or overnight to allow flavors to
blend.

Makes 10 servings.
* May substitute 18 packets Equal sweetener
