Marinade:
� small chopped onion
1 garlic clove chopped
� tsp. fresh ginger or � tsp. ground
� cup cold chicken stock
2 tblsp. Lime juice
1 tsp. Tabasco
� tsp. red pepper flakes
1/3 cup peanut butter
1 tsp. brown sugar
1 tsp. soy sauce
Blend together and pour over 1 pound of chicken breasts that have been cut into strips.
Marinate for at least 2 hours.
Thread onto skewers and grill.
You can serve this over rice. If using the marinade over rice, please heat for 2 minutes before pouring over this dish.
